Chocolate Chia Pudding

Chocolate Chia Pudding

The perfect dessert to take advantage of all the chia goodness! Full of healthy fat and protein

Ingredients

  • 1 (13.5 ounce) can full fat coconut milk, blended
  • 1 cup water
  • 2 tablespoon cacao powder
  • ⅛ teaspoon vanilla stevia (or maple syrup)
  • ⅛ teaspoon celtic sea salt
  • ¼ cup chia seeds
  • optional toppings- homemade whipped cream, raspberries, mint

Instructions

  1. In a vitamix or blender, combine coconut milk, water, cacao powder, stevia/syrup, and salt
  2. Blend until smooth
  3. Transfer mixture to a one quart mason jar
  4. Add chia seeds and shake well
  5. Refrigerate overnight to let chia seeds soften and absorb liquid
  6. Top as desired and serve!
